Cookie for the Day

No-Bake Chocolate Oat Bars (pictured).....
1 cup (2 sticks) butter
1/2 cup packed brown sugar
1 teas. vanilla
3 cups uncooked quick oats
1 cup smisweet chocolate chip
1/2 cup crunchy or creamy peanut butter
Grease 9-inch square baking pan. Melt butter in large saucepan over medium heat. Add brown sugar and vanilla; mix well. Stir in oats. Cook over low heat 2-3 minutes or until well blended. Press half of mixture into prepared pan. Use back of large spoon to spread mixture evenly.
Meanwhile, melt choc. chips over low heat, stirring occasionally. Stir in peanut butter. Pour chocolate mixture over oat mixture in pan; spread evenly with knife or back of spoon. Crumble remaining oat mixture over the choc. layer, pressing down gently. Cover and refrigerate 2 to 3 hours or overnight. Bring to room temp. before cutting into bars. (bars can be frozen; let thaw at least 10 minutes before serving.) Makes 32 bars.

I want some of those,,they look so delicous. I would be like that guy that I saw on t.v. the other day that was so hugh he couldn't get out of his bed, if I lived with you. Your a great cook girlie!! Love to see all the cookies that you make,,yum!
