Easiest Peanut Butter Cookies...EVER !!!!


I just had to share this recipe. This recipe was given to me years ago by a sweet woman who use to own a gourmet coffee shop and deli here in Placerville...I couldn't believe it when she told me the recipe....too good to be true! My son would come home after school with his friends and head right to the kitchen to bake up a batch of these...they would then proceed to eat every single one of them! Here it is....oh! I didn't leave ANYTHING out...promise.
Easy Peanut Butter Cookies

1 CUP PEANUT BUTTER
1 CUP SUGAR
1 EGG (large)

That's it !!!!!!!! No flour...or anything else...mix all the ingrediants in a bowl..roll into balls, and flatten with the back of a fork. Bake at 350 for about 7-10 minutes...depending on your oven....just keep an eye on them....when done..remove from oven...cool a few minutes on sheet before removing...
PS...greasing the cookie sheet is not necessary either! Makes about 1 dozen.

The Best Chocolate Chip Cookies


1 cup butter, soft
1 cup sugar
1 cup brown sugar
2 eggs
2 teas. vanilla extract
3 cups flour
1 teas. baking soda
2 teas. hot water
1/2 teas. salt
2 cups chocolate chips
1 cup chopped walnuts
Preheat oven to 350.
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in vanilla, Dissolve the soda in the water and add to batter along with the salt. Stir in flour, chips, and walnuts. Drop by large spoonfuls onto ungreased pans. Bake for about 10 minutes...or until the edges are browned.
These are the BEST!!!!!!!! Crisp and chewy at the same time...perfect with an iced glass of cold milk! Bake these today for yourself...and your sweeties!!! :-)

Happy Birthday Blue !!!!!!!!!!!!


Chocolate Surprise Cookies

2 3/4 cups flour
3/4 cup unsweetened cocoa powder
1/2 teas baking powder
1/2 teas baking soda
1 cup (2 sticks) butter, softened
1 1/2 cups light brown sugar
1/2 cup plus 1 Tab sugar
2 eggs
1 teas vanilla
1 cup chopped pecans, divided
1 package (9oz) caramels coated in chocolate
3 squares (1 oz. each) white chocolate, coarsely chopped
Preheat oven to 375. Combine flour, cocoa,baking powder and baking soda in medium bowl; set aside.
Beat butter, brown sugar and 1/2 cup granulated sugar with mixer at med. speed until light and fluffy; beat in eggs and vanilla. Gradually add flour mixture and 1/2 cup pecans; beat well. Cover dough; refrigerate 15 minutes or until firm enough to roll into balls.
Place remaining 1/2 cup pecans and 1 Tab sugar in shallow dish. Roll tablespoonful of dough around 1 caramel candy, covering completely; press one side into nut mixture. Place, nut side up, on ungreased cookie sheet. Repeat with remaining dough and candies, placing 3 inches apart.
Bake 10 to 12 min. or until set and slightly cracked. Let stand on cookie sheet 2 minutes. Transfer cookies to wire rack; cool completely.
Place white chocolate in microwave until melted. Drizzle onto cookies. Let stand about 30 minutes or until set. Makes about 3 1/2 dozen cookies........ENJOY!!!!!!
